Black and orange and good-for-you, these snacks will get some wholesome stuff into the kids before they chow down on the chocolate and marshmallows.

Prep time: 5 minutes
Cook time: 15 minutes

  • 6 8-inch whole wheat tortillas
  • 1½ cups black beans, rinsed and drained
  • 1½ cups shredded cheddar cheese
  • ¼ cup cilantro, finely chopped
  • Sour cream and salsa, optional

Preheat a skillet over medium-high heat. Place one tortilla in the skillet and top with a third of the black beans, cheese, and cilantro. Top with another tortilla. Cook for 2 to 3 minutes, then carefully flip the quesadilla to brown the other side for another minute. Remove from the skillet and place on a cookie sheet in a 200° oven to stay warm, then repeat with remaining ingredients until all quesadillas are cooked. Cut quesadillas into wedges and serve alongside sour cream and salsa for dipping.
