Cucumbers
Sure, cukes add crunch to salads, but these water-rich veggies are good for so much more. And with a flavor more mild than most other veggies, cucumbers are guaranteed kid-pleasers.
Creamy cucumber soup Blend 2 large or 3 medium seedless, peeled cucumbers with a cup of plain yogurt, a handful of diced onion, a garlic clove, and a generous drizzle of olive oil. Serve cold.
Cucumber boats Slice a large cucumber into quarters, then slice each quarter in half length-wise. Use a spoon to hollow out the flesh and fill the hollowed-out cucumbers with low-fat cottage cheese. Top the cottage cheese with raisins and dust with cinnamon.
Cold and crunchy tea sandwiches Spread low-fat cream cheese on a slice of whole wheat bread. Add sliced cucumber, sliced avocado, and chopped dill, then top with another slice of bread. Cut into triangles and serve with a pitcher of lemonade.
