Everyone looks forward to a slice (or two!) of pumpkin pie come fall, but after a while, the novelty wears off. The good news: There are plenty of other ways to still get that cozy pumpkin feeling without going into pie-overload.

1. Sweet Dessert Boats

Roast pumpkin slices with cinnamon and sugar and top with whipped cream and chopped pecans.

2. Silky Smoothie

Blend low fat milk or yogurt with canned pumpkin, cinnamon, ice, and pure maple syrup to taste.

3. Veggie Stir-fry

Sauté chopped pumpkin and broccoli florets with soy sauce until tender. Serve over rice and garnish with pumpkin seeds.

4. Stuffed Squash

Remove strings and seeds from a whole pumpkin. Fill with bread cubes, cheese, and dried fruit, and bake until cheese is bubbly.

5. Spiced Puree

Process roasted pumpkin pieces with stock to thin, and salt and pepper. Serve under chicken or veggies as a tasty alternative to rice or pasta.
