Ingredients

  • 1/3 cup Earth Balance® Original MindfulMayo™
  • Dressing & Salad Spread
  • 1/4 cup chopped cilantro
  • 1 tablespoon wasabi paste, to taste
  • juice and zest of one lime
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar
  • salt, to taste
  • 5 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1 tablespoon black sesame seeds

Directions

  1. Place first six ingredients in a blender and pulse until smooth. Adjust seasonings and add salt to taste.
  2. Pour dressing in a large bowl. Add cabbage, carrots, green onions, cilantro, peanuts and sesame seeds. Toss to coat evenly.
