| It’s 2008. (When did that happen?) 2007 seemed to fly by and all plans simply went out the window. The New Year is always a good time to make plans, start over, and make resolutions. Sit down with your kids and discuss positive changes that we all can make.
Here is KIWI’s list of resolutions:
Always remember to turn the lights off when we leave the house or office.
- Limit the use of bottled water; make sure to always have a reusable bottle.
- Unplug cell phone chargers when our phones are finished charging.
- Plan more “me-time.”
- Exercise more!
- Try a new activity with our children at least once a month.
- Start composting.
- Take an eco-friendly vacation (see our list below).
- Eat more organic foods.
- Try new healthier foods.
- Add at least one piece of organic fiber clothing to our wardrobe.
- Sponsor a child through World Vision.
- Make the most out of every day and appreciate all of the good things in our lives!

Keeping with our resolution to try new foods, KIWI has recently discovered the wonders of black rice. To learn all about this deeply hued rice, pick up KIWI’s February 2008 issue; our Farm to Plate column covers this interesting grain.
Bavaroise of Mango with Forbidden Rice

INGREDIENTS:
For the Bavaroise:
1 1/2 cups cream
2 ripe Hayden mangoes, about 12 oz. each
1/2 cup water
1/2 cup superfine sugar
3 Tbsp. lemon juice
pinch of salt
1 tsp. powder gelatin
1/4 cup water
For the Forbidden Rice:
1/2 cup Forbidden Rice
1 1/2 cups water
1 tsp. salt
1 Tbsp. sugar
1/2 pandan leaf, optional (available at Asian markets)
For Garnish:
Diced mango
Diced pineapple
Lime segments
METHOD:
Lightly whip cream and chill it in refrigerator. Peel the 2 mangoes, remove the pits and puree the flesh in a blender. Add water, sugar, lemon juice and salt. Blend thoroughly and strain through a chinois or strainer.
In a 5-quart metal bowl, dissolve the gelatin powder in 1/4 cup water. Place bowl over warm water and soften until melted. Temper the mango mixture into gelatin, adding a little bit at a time and incorporating thoroughly. Fold the mixture into the whipped cream. Pipe or spoon mixture into dessert dishes, and chill 3 to 4 hours.
Combine rice, 1 1/2 cups water, salt, sugar and pandan leaf in a small saucepan and bring to a simmer. Cover, reduce heat and cook until all water has been absorbed, 30 to 40 minutes. Cool to room temperature.
To serve, place a scoop of the black rice on top of each mango Bavarian cream.
