Shrimp Cocktail with Kiwi Guacamole - - Zespri Kiwi
Shrimp Cocktail- Kiwi Guacamole- Healthy Appetizer Recipes
This shrimp cocktail packs a vitamin punch with nutrient-dense ingredients, fresh kiwifruit, avocados, tomatoes and herbs

INGREDIENTS:
4 Zespri's green kiwifruit, scooped into pieces
1 avocado, peeled and pitted
1 Tbsp. fresh key lime juice
1 medium yellow heirloom tomato, seeded and diced
2 Zespri's green kiwifruit, scooped and cubed
1/3 cup sweet onion, minced
1 Tbsp. cilantro, chopped
1 large clove garlic, minced
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. black pepper, ground
24 jumbo shrimp, cooked, 21/25 count

METHOD:
Mash pieces from four kiwis, avocado and lime juice in medium bowl, leaving some lumps. Stir in tomato, the two cubed kiwis, onion, cilantro, garlic, sugar, salt and pepper. Spoon 2/3 cup into chilled martini glass, and arrange six shrimp around the rim. Serve immediately.

Mediterranean Couscous
Mediterranean Couscous- cherry tomatoes- Feta cheese- kalamata olives- red onion
Mediterranean Couscous with cherry tomatoes, Feta cheese, and kalamata olives

INGREDIENTS:
1 ½ cups water
1 cup uncooked couscous
2 cups cherry tomatoes, quartered
1/3 cup crumbled Feta cheese
¼ cup kalamata olives, pitted and chopped
¼ cup red onion, chopped
2 tsp. dill, chopped
3 tsp. lemon juice
1 ½ Tbsp. extra-virgin olive oil
¼ tsp. salt
¼ tsp. ground pepper

METHOD:
1. Bring 1 1/2 cups of water to a boil in a medium saucepan Add couscous and salt and stir. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. (see directions on box )
2. In a mixing bowl add lemon juice, dill and pepper. While mixing rapidly add the oil in a slow steady stream. This will make a creamy dressing.
3. Add red onions, tomatoes, feta and olives to the dressing and blend with the couscous.
4. Serve while couscous is warm to hot.

Makes 4 Servings
