METHOD:
1. Bring garlic, onion, carrots and water to a simmer in saucepan over medium-low heat. Cover and cook until carrots are tender when pierced with fork, about 5 minutes.
2. Add lentils and simmer until they’re heated through and flavors have combined, 3 minutes.
3. Transfer to food processor and pulse until mixture reaches desired consistency. Scoop mixture into ice cube trays and freeze overnight.
4. Remove from trays and store in plastic freezer bags.
5. To serve, heat 2 or 3 cubes in microwave in 20-second intervals until warm, or heat in saucepan.
