INGREDIENTS:
8 cups apricots, peeled, pitted and halved
3 1/2 cups demerara sugar
6 Tbsp. lemon juice |

METHOD:
1. Combine all ingredients and place in saucepan.
2. Cook over medium heat and bring to a gentle boil.
3. Continue to cook for 25 to 30 minutes or until desired consistency is achieved.
4. Wait for the mixture to cool and then place in jars.
