| Chocolate Peanut Butter Soy Gelato |

INGREDIENTS:
3 cups soymilk
3/4 cup sugar
6 Tbsp. peanut butter (creamy)
3/8 cup chocolate, finely chopped
1/8 tsp. salt |

METHOD:
1. Heat soy milk, salt and sugar until sugar dissolves(at about 175 degrees).
2. Pour over chocolate and whisk until smooth.
3. Whisk peanut butter into warm chocolate-and-soy mixture.
4. Chill mixture to 40 degrees in an ice bath, or in the fridge if you can wait 4 hours.
5. Freeze according to ice cream maker instructions.
