Grilled Fish Sandwich

INGREDIENTS:
2 4 ounce pieces of fresh fish (ahi, mahi mahi, halibut, tuna, sea bass and salmon any fish that’s thick and is good on a grill)
1 tomato
2 handfuls of mixed salad greens
2 Tbsp of Tartar Sauce* (or get from the fish counter)
4 slices of sourdough bread
Lemon
Olive oil
Salt and pepper

METHOD:
First slice your tomato into large 1/4 inch slices. Set out your mixed greens and put your bread in the toaster oven on light toast.

How to Grill Fish:
Rinse and dry 2 filets of fish that are about 1/2 inch thick and about the size of your bread. Season them in a shallow pan with the juice of 1/2 a lemon, about 1 tablespoon of olive oil, salt and pepper. Place fish on a hot grill and cook both sides for about 3-5 minutes. Do not overcook fish. You can also broil your fish on a heavy duty baking pan, lined with foil. Put your fish on the foil and season it with lemon, oil and salt. Broil for about 6-10 minutes. Keep checking. When the toast is done put tartar sauce on both sides, then the fish, tomato and the lettuce. Enjoy.

*Tartar Sauce - mix together 1/2 a cup of mayonnaise or Vegannaisse, 2 Tbsp pickle relish, 2 Tbsp minced shallots, 1 Tbsp lemon juice, 1 tsp parsley, pinch of salt.
