Oolong Tea and Ginger Pork Tenderloin with Sweet Glaze - Melynda Louise Saldenais

By choosing fair trade tea, you’re supporting ancient tea-growing communities around the world while enjoying the rich flavors and healthy benefits of black, oolong, green and white teas. Here, we use a simple marinade made with oolong tea and fresh ginger to add exotic flavor to an easy everyday meal. Oolong tea infuses a subtle, fruity smokiness into the pork, while a glaze of soy sauce and brown sugar adds a punch of salty sweetness.

INGREDIENTS:
Fair trade ingredients: brown sugar, pineapple, tea

1 ripe fair trade pineapple
3 fair trade oolong tea bags
3" piece of fresh ginger, chopped
1 1/2 lbs. pork tenderloin, trimmed
2 Tbsp. vegetable oil
1/4 cup soy sauce or tamari
1/4 cup fair trade light-brown sugar
1 bunch green onions, finely diced (green part only)

METHOD:
1. Peel pineapple and cut into four 1/2" rounds (use the rest of the pineapple for salads or snacks). Create pineapple rings by removing the core of each round with a small round cookie cutter; set aside.
2. Bring 3 cups of water to a boil. Steep tea bags and ginger for 10 minutes. Remove tea bags and allow mixture to cool to room temperature.
3. In a medium bowl, add pork and pour liquid over meat. Cover and refrigerate for 4 hours or overnight.
4. Preheat oven to 400°F.
5. Heat soy sauce and brown sugar in a saucepan over medium heat until reduced to a thick glaze, about 5 minutes.
6. Heat 2 ovenproof skillets over medium-high heat. Add 1 tbsp. vegetable oil to each pan.
7. Remove pork from tea marinade and place in one pan. Lay the pineapple rings in the other pan.
8. Brush pork liberally with glaze and sear 3 minutes per side, until golden crust forms.
9. Roast pork in oven until it reaches 155°F, about 8 to 10 minutes. Apply the glaze a few times while roasting.
10. Brush pineapple rings with glaze and cook 2 minutes per side until caramelized; set aside.
11. Remove pork from oven and allow it to sit 5 minutes before slicing.
12. Garnish pork with green onions and serve with pineapple rings.
