tomato pasta

Ella Woodward, author of Deliciously Ella, turns to this comforting dish when she has almost nothing in her fridge. You only need two fresh ingredients!

Ingredients

  • 1 pound pasta
  • 1 pound cherry tomatoes, chopped
  • 2 14.5-ounce cans tomatoes
  • 4 Tablespoons tomato paste
  • 6 Tablespoons apple cider vinegar
  • 2 Tablespoons tamari
  • Salt and pepper
  • 2 15-ounce cans black beans
  • 1 8-ounce bag of spinach
  • Olive oil

Directions

  1. Cook the pasta. While the pasta cooks, make the sauce.
  2. Combine cherry tomatoes, canned tomatoes, tomato paste, apple cider vinegar, tamari, and salt and pepper in a large saucepan. Allow the mixture to simmer into a sauce for about 5 minutes.
  3. Rinse and drain beans, then stir them into the sauce along with the spinach.
  4. Once the pasta is ready, stir in the sauce and drizzle olive oil over the top.
Makes 4 servings

Per serving: 286 calories, 2g fat, 16g protein, 53g carbohydrates, 10g fiber, 4g sugar
