1. Fill a large bowl with hot water. Dip a spring roll wrapper into the water until it is just soft, about 30 seconds. Be careful— they’re delicate!
2. Spread the wrapper out on a cutting board and gently pat dry with a clean kitchen towel. It’s okay if it’s not perfectly flat.
3. Place two lettuce leaves on the bottom third of the wrapper. Top with noodles, shrimp, bell pepper, carrot, and mint leaves. You want to have enough ingredients for each roll, so portion them out accordingly.
4. Fold the sides of the wrapper over the ingredients and gently roll, starting with the bottom of the wrapper where the ingredients are. Repeat the steps with the additional wrappers. Cover completed rolls with a damp kitchen towel so the rolls don’t dry out.
