Here’s how to transform a few common dinner leftovers into other meals.
Grilled or sautéed chicken breast
Slice or cube the leftovers and fold into a tortilla; stir into cold pasta or couscous with cut-up vegetables; or mix with a little mayonnaise or yogurt, celery, and some dries cherries to make a delicious chicken salad.
Pasta, rice, quinoa, or couscous
Make extra, chill immediately, and toss with a variety of colorful vegetables for a confetti salad.
Toss with diced red pepper and onion for a scoop able bean salsa. Or, mash them a little and wrap in a tortilla with a touch of Monterey Jack, or mix them with a dressing of extra-virgin olive oil and lime juice.
If you make or buy pizza dough, bake an extra round or two brushed only with olive oil and a bit of sea salt. Slice into wedges and include in the lunch box instead of pita or flatbread.
