Who says you need to turn on the oven to make a yummy batch of oatmeal raisin cookies? These good-for-you treats will set in the freezer–so there’s no energy required from additional appliances.
In a medium bowl, combine:
2 ripe mashed bananas
1 1/2 cups rolled oats
1/4 cup raisins
3 tablespoons honey
2 tablespoons almond butter
1 teaspoon ground cinnamon
a pinch of salt
Mix well with your fingers or a fork. Roll the mixture into 10 to 12 small balls and flatten them into cookie shapes, then place on a plate or baking sheet and freeze for 30 minutes. Devour with your family!
