Makes 4 servings

1 pound pasta

1 pound cherry tomatoes, chopped

2 14.5-ounce cans tomatoes

4 Tablespoons tomato paste

6 Tablespoons apple cider vinegar

2 Tablespoons tamari

Salt and pepper

2 15-ounce cans black beans

1 8-ounce bag of spinach

Olive oil

Directions

1. Cook the pasta. While the pasta cooks, make the sauce.

2. Combine cherry tomatoes, canned tomatoes, tomato paste, apple cider vinegar, tamari, and salt and pepper in a large saucepan. Allow the mixture to simmer into a sauce for about 5 minutes.

3. Rinse and drain beans, then stir them into the sauce along with the spinach.

4. Once the pasta is ready, stir in the sauce and drizzle olive oil over the top.
