3/4 cup low fat yogurt
1/2 cup gluten-free rolled oats
2 tablespoons chopped unsulphured dried apricots
2 teaspoons pure maple syrup, or to taste
1/4 cup non dairy milk of choice

Originally from Switzerland, muesli’s an oat-based breakfast cereal that’s similar to granola. But instead of baking the oats in the oven, they’re soaked overnight in milk, yogurt, or a mixture of both, then topped with dried fruit or nuts. This recipe makes enough muesli for one person, but you can double, triple, or quadruple the ingredient quantities and soak the oats in a larger container for more servings.
Directions
In a small bowl, combine the yogurt and the milk. Add the oats and mix well. Cover and refrigerate overnight.
Top the yogurt mixture with the almonds, apricots, and maple syrup. Serve immediately, or pack in a container to eat on the go.
