Avocado Crostini with Shrimp

Ingredients


Makes 3 servings

1 baguette, sliced

2 avocados

1 dozen large shrimp

¼ cup fresh basil, chopped

1 Tablespoon olive oil

1 teaspoon everything bagel seasoning

salt and pepper

Yummy sautéed shrimp atop fresh, mashed avocado–this quick and bite-sized appetizer that will be a hit with your family this holiday season!

Directions

1. Preheat oven to 350 °F.

2. Lay baguette slices out on a sheet pan and drizzle with olive oil. Bake at 350 ℉ for about 10 minutes or until crisp.

3. Pat the shrimp dry with a paper towel and sprinkle with salt and pepper. Sauté the shrimp over medium high heat for about 3 minutes per side or until cooked through.

4. In a small bowl place the avocado and mash gently with a fork. It’s okay if there are some bigger pieces.

5. Assemble toasts by spreading them with mashed avocado, sprinkle with everything bagel seasoning, salt and pepper. Top with basil and one shrimp.

6. Serve immediately.
