Makes 8 servings

1 1⁄2 cups steel-cut oats

1 14-ounce can (1 3⁄4 cups) coconut milk

4 cups water

1 teaspoon vanilla extract

3 Tablespoons brown sugar

1⁄4 teaspoon kosher salt

1⁄2 cup dried tart cherries

1⁄2 cup shredded coconut, toasted if desired 

Maple syrup, for serving

Assemble this cereal before bed and your family will wake up to a hot, nutritious breakfast! Steel-cut oats deliver a healthy dose of fiber, and dried cherries add antioxidants and a burst of sweetness.

Directions

1. Grease the inside of a slow cooker crock with cooking spray or coconut oil.

2. Add the oats, coconut milk, water, vanilla, brown sugar, and salt to the crock; stir to combine. Cover, set slow cooker to low, and cook for 1 hour.

3. Change setting to warm and cook 7 to 8 hours longer, until the oats are cooked through and creamy.

4. In the morning, stir in the cherries. Divide oatmeal into bowls and top with shredded coconut. Drizzle with maple syrup, if desired.
