Makes 4 servings

1 ripe avocado (skin and pit removed)

1 cup arugula

⅛ cup parsley leaves

⅛ cup basil leaves

⅛ cup chives

2 Tablespoons lemon juice

2 Tablespoons avocado oil

¼ cup water

1 clove garlic

½ teaspoon salt

¼ teaspoon fresh ground black pepper

Brighten up any salad, protein, or veggie bowl with this creamy dressing. Made with healthy fats, plenty of flavorful herbs, and a zing of lemon and garlic, it pairs perfectly with a variety of delicious options. 


1. In the bowl of a small food processor, add all ingredients and process until smooth and creamy. The dressing should take on a lighter color as the oil whips.

2. Serve over salads, chicken, fish, and more.
