1 cup almond butter
1 cup coconut sugar
½ cup cocoa powder
1 large egg
1 Tablespoon water
1 teaspoon baking powder
1 teaspoon vanilla
½ teaspoon peppermint extract
½ cup crushed peppermint candies

Chocolate with peppermint is one of the season’s most notable flavor combinations. This bright and warm combo makes these paleo cookies an ideal addition to a holiday cookie plate.
Directions
1. Preheat the oven to 350ºF.
2. Combine all the ingredients (except peppermint candy) in a large bowl. The dough will be very thick.
3. Add the crushed peppermint and mix into the dough gently.
4. Roll the dough into 1-inch balls, put them on a cookie sheet and gently push the balls to flatten slightly.
5 Bake for 10 minutes and let sit for another 8 minutes to set. Let cool completely on a wire rack.
