3 sweet potatoes, peeled
⅓ cup all-natural maple syrup
1 Tablespoon olive oil
½ teaspoon cinnamon
¼ teaspoon salt
A healthier alternative to the classic sweet potato casserole often seen on American’s tables during Thanksgiving, this recipe is just as delicious without the marshmallows. Using just five ingredients, this easy-to-make dish is a hit with kids and picky eaters!
1. Preheat the oven to 375ºF.
2. Dice peeled sweet potatoes into ½ inch cubes and place in a mixing bowl. Add the rest of the ingredients and stir well to coat evenly.
3. Dump into a lightly greased 11 x 7 inch pan and spread out.
4. Bake for 45 minutes, stirring once halfway through to re-coat potatoes. Serve warm.
