Makes 4 servings

1 TABLESPOON OLIVE OIL

1 SMALL ONION, DICED

1 POUND UNCOOKED LARGE SHRIMP, PEELED AND DEVEINED

1 TABLESPOON LIME JUICE

1⁄2 TEASPOON SALT

1⁄2 TEASPOON CUMIN

2 TABLESPOONS CILANTRO, CHOPPED

4 WHOLE WHEAT TORTILLAS, WARMED GUACAMOLE AND SALSA, FOR TOPPING (OPTIONAL)

Since shrimp has a milder flavor, kids are more likely to try—and like—this type of seafood. For an easy way to get your child involved in the kitchen, have him tear up the cilantro with his hands. Or, turn dinner into a “build your own taco” night. Set out toppings, like guacamole and salsa, and let him choose what he’d like to add to his dish—he’ll have fun and feel empowered at the same time.

Directions

1. Heat 1 Tablespoon oil in a large sauté pan over medium heat, add onions and sauté for 3 minutes.

2. Add the shrimp, lime juice, salt, and cumin, and sauté for 3-4 minutes, until cooked through.

3. Top with chopped cilantro and combine. Serve with whole wheat tortillas, guacamole, and salsa.
