Makes 12 servings

BAR:

1⁄4 cup brown rice flour

3⁄4 cup potato starch, divided

1 cup granulated sugar, divided

1⁄2 cup softened organic butter

3⁄4 cup organic whipping cream

2 large organic eggs

1⁄4 cup organic butter, melted

1 Tablespoon instant decaffeinated coffee

1 teaspoon pure vanilla extract

1 1⁄4 cups semisweet chocolate chips, plus more for topping

TOPPING:

4 ounces organic cream cheese, softened

3 tablespoons granulated sugar

1⁄4 cup whipping cream

semisweet chocolate chips, sprinkled (optional)

Tiramisu is a delicious Italian dessert—and this bar version is fun to make with kids. It calls for decaf coffee for a flavor punch without the caffeine. (Though you can switch to regular if you’re having an adults-only night!)

Directions

1. Preheat oven to 350°F.

2. In a medium bowl, beat together brown rice flour, 1⁄2 cup potato starch, 1⁄4 cup granulated sugar, and softened butter. Press mixture into an ungreased 8-by-8-inch baking dish, baking for 12 minutes.

3. While crust is baking, whisk together remaining 1⁄4 cup potato starch and 3⁄4 cup granulated sugar, plus whipping cream, eggs, melted butter, coffee, and vanilla. Set aside.

4. Remove crust from oven, sprinkling chocolate chips on top. Pour egg mixture over chocolate chips and bake for 40 minutes, or until golden brown.

5. For topping, beat together cream cheese, sugar, and whipping cream in a large bowl. Allow bars to cool completely on a wire baking rack for 90 minutes before spreading cream cheese mixture on top. Sprinkle with chocolate chips, if desired. Refrigerate until ready to serve.
