Makes 6 servings

¼ cup vegan butter

¼ cup flour

3 cups vegetable broth

1 teaspoon dijon mustard

¼ teaspoon onion powder

¼ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon ground black pepper

While traditional gravy is made using the drippings of meat, this recipe uses a roux to thicken and give flavor. Depending on the type of vegetable broth you use, your gravy might turn out light and yellow or dark and more brown. 

Directions

1. In a medium saucepan, melt butter over medium heat until completely melted. Gradually add flour, stirring constantly, until mixture has thickened. Let toast over medium heat for 2–3 minutes, stirring occasionally, or until mixture is lightly browned.

2. Gradually pour in vegetable broth, about ½ cup at a time. Stir in between each addition until mixture is the same consistency. Do not add in all the broth at once or you might end up with lumpy gravy.

3. Once all the vegetable broth has been mixed in, add dijon and spices and let simmer for about 5 minutes or until desired consistency, stirring frequently.

4. Serve warm over mashed potatoes, stuffing, and more!
