Walnut-Dusted Chard with Golden Raisins

Ingredients


Makes 4 servings

2 tablespoons olive oil

3 cloves garlic, minced

2 bunches Swiss chard, tough stems removed and leaves thinly sliced

Salt and pepper, to taste

1/4 cup walnuts, very finely chopped

2 tablespoons golden raisins

2 shallots, minced

Most kids turn their noses up at greens because of too-tough stems and a super bitter flavor. The solution? Cut the stems out (you can save them for composting), and balance out bitterness with something sweet, like raisins. After sautéing the chard, your child can help you “dust” the greens with the chopped walnuts and sprinkle the raisins over top.

Directions

Warm the olive oil in a large skillet over medium heat. Add the shallot and garlic and cook, stirring frequently, about 1 minute.

Add the Swiss chard, a big pinch of salt, and pepper to taste. Saute for 3 to 5 minutes, or until the chard is wilted and most of its liquid has cooked off.

Transfer the chard to a platter. Top with the walnuts and raisins and serve immediately.
